
Today was the second lesson of my online via zoom BBQ Master Class. Last week one of my students asked me about making desserts on the BBQ, so I created this one for today’s lesson.
The Key to making your dessert dishes on the BBQ is a clean grill and free from of bits of chicken and barbecue sauce, which of course is a particular No No, for your vegetarian guests. So if you wish to create your “pudding on the grill” you need to first give your grill a good brush down with a wire brush, to clean it. Once clean, wipe the grill bars down with a clean rag soaked in a little vegetable oil. to remove any loose carbon particles which wil get onto your food. If your BBQ is a charcoal grill you might need to also top up your charcoal and let the coals temper before you start which usually takes 35 minutes or so.

Grilled Peaches (serves 2)
2 or 3 large ripe peaches
Sour cream
Mixed Spice (similar to All Spice)
2 Tbsp Peach Schnapps
Fresh Raspberries to decorate
juice and zest from 1 large lemon
Vegetable Oil
3 Tbsp Caster Sugar
Method:
- Remove the stones from your peaches and brush lightly with vegetable oil.
- Heat the sugar in a non stick frying pan until begins to turn lightly brown at the edges.
- Add the juice and zest of the lemon and the peach schnapps, stir well and cook making sure the sugar has completely melted then remove from the heat.
- Heat the grill up to a medium heat and grill the peaches 3 minutes cut side down.
- Turn the peach over and cook them 2 more minutes then transfer them to the frying pan keep warm on a low heat and baste with the peach syrup, then sprinkle with mixed spice.
To serve
Spoon 2- 3 peach halves into each bowl add some syrup and then top with a dollop of Sour cream and a few fresh raspberries and a sprinkle of mixed spice.
Chefs Tips
*Use 1 large peach per person or add more if they are smaller and don’t use Doughnut (flat peaches) as getting out the stone cleanly, is difficult. The peaches must be ripe to get the best flavour from them.

Love grilled peaches, and I love your backyard! Your gas grill is similar to my new one that I’ve barely broken in with a wok insert. I must admit, I like my little charcoal Weber the best though.
I’m stealing your idea of the herb shelf right by the barbeque! I only have to move my herb pots a little distance…

The charcoal grill you see in the reel is 12 years old and I removed the rust and spray painted it with high heat paint. In my master class I use both gas and charcoal BBQ’s to show people the pros and cons of both.
I also try to get my audience to think of other dishes than traditional pitmaster BBQ. Last week I did home made Naan Bread, Roasted Vegetable Curry and smoky grilled marsala chicken.

I’m a fan of grilled peaches w burrata. We had some in Healdsburg California last weekend. Just divine!
Thanks for sharing your tips. I went on a shopping rant recently and bought many liquors. I don’t remember buying peach, but I bet substituting a cognac would do.

Back in the UK we have endured a lot of rain in July and so far in August (after a hot June) whilst mainland Europe is suffering from a record heat wave. Thankfully my popup gazebo keeps me dry on days I’m filming.
We are enjoying the year but it is going to fast.
