
In August I will be teaching a 5 part BBQ Masterclass via Zoom for UK residents.
Even if you are not a UK resident, you will be able to see some of the videos we create when they are posted on my YouTube channel
Whether you are a beginner or a skilled pit master cooking outdoors is a great opportunity to exchange ideas, recipes and techniques. My starting point for barbecue cooking is to show people that it is more than a rack of pork ribs or brisket as good as that can be. What about the vegetarians? Or how about pizza or even baked cheesecake on a barbecue?
My 5 part 2 hour lessons (via Zoom) will cover the basics of direct and indirect BBQ cooking. I will also be showing students how to create an outdoor kitchen, so you can be organised. And how to cook foods safely and most importantly control the heat, even on a charcoal grill! I will also talk about the basics of smoking food (hot and cold smoking) and what the difference is.

During the month of August I will be reviewing a Landmann Gas barbecue: in depth talking about build quality, flexibility of this model and now this stacks up to other models out there.


Gas versus Charcoal
I will also spend some time during the course talking cooking on gas versus charcoal. Infact, my outdoor kitchen will also have my old faithful no brand charcoal grill I have revived and refurbished for this event.
Weather in the UK is unpredictable
Whilst most of mainland Europe is sweltering around 40 C (104 F) and we in the UK have had a very wet July so far due to the Jet stream that has meant changeable weather with temperatures ranging from 14 C -27 C. So to make my BBQ masterclass possible regardless I bought myself a 3 metre x 3 metre gazebo, so at least I can cook in the dry.
Meater Block
I have also been sent a meater block to use and review. MY colleagues in the UK and in the Netherlands all think it is a very useful wireless thermometer, so watch this space!

Hi Daniel and thanks for asking.
My BBQ masterclass consists of 5 x 2 hours lessons taught via zoom. Whenever I teach cookery via zoom I show the students 2 recipes (all my recipes). One recipe is filmed ahead of time and (my wife Sophie is cameraman and editor). The video is then shown during class and the students get access to recipes and the video so they can use it as a cook along tool. The second recipe is a live demo and the students get a copy of the recipe. I encourage the students to ask lots of questions so the lessons are interactive.
I use 3 webcameras for my cookery lessons (one overhead shot of cutting board, one overlooking the BBQ and side burner and one for my head shots of me talking. It takes time to set up and breakdown the equipment but it’s a lot of fun.
The BBQ Masterclass will finish at the end of August, plus I intend to invite a few neighbors over as a thank you for their understanding during filming and live lessons.
